Thanks for the numerous suggestions. The problem was the metadetach 
lines, in that when the mirrors are detached, booting on the destination 
  system will start SDS. However, because the mirrors were detached SDS 
has nothing to work on, so it panics. D'oh.

Solution One (Nasty): Don't detach. Get the system to a quiescent state 
(off would be good), and then just yank the disk.
Solution Two: detach and then mount the root fs on the disk you'll be 
moving. Alter /etc/system to not load SDS and /etc/vfstab to use 
/dev/dsk/cntndnsn rather than the meta devices. Then move the disk and 
rebuild the SDS stuff.
