Got some good responses but the key one was with regard to vmware which pointed me to the fact that my esx hosts were not synced properly so the solaris vm in question had to keep setting the real time back from the hardware clock on the esx host thus killing dovecot. It was really as simple as setting all of the esx hosts to a proper ntp server and having the same time as the virtual solaris host so that small time adjustments would not kill dovecot.
