I resolved this by umounting everything, clearing down the mountpoints and rebooting. Thanks to Chris Banal who suggested "zfs umount -a" and then removing all the mount points after which the filesystems mount fine. Interesting thing is that Chris also saw this after patching so maybe the Live Upgrade work was relevant after all. I've rebooted a couple of times since and its been fine so something to look out for on the next patching phase I guess. Cheers.
