My original post was for "Speech recognition software" for Unix systems. The
original responses indicated that there was no software as yet, and the way
to go was better equipment and more exercises.
Gary White and Kevin Sheehan emailed back saying that this wasn't quite true.

This is not necessarily true. I worked on an Air Force base that had a
handicapped person and some Gov. agency paid to purchase software that
could be programmed to his voice to open certain programs. We were
running Sol 2.3 and the software was very particular about the
inflections in the voice and what-not.
The name of the software is IN3 Voice Command. It comes with a set of
headphones with a microphone attached kinda like an operator would use.
